Best of the Land cafe is now operating 2 days a week from Bondi Squash club serving take away Duck Pancakes on Saturday and Roast Lunch on Sundays. Best of the Land honors Australian award wining products by pairing it with an award winning chef. Allows you to eat good food on a whim that has been thoughtfully prepared to celebrate local ingredients you love.

Meet Bryan – I started cooking at the of 15 with my mum, never cleared the tables, farmers wife with 7 children. Did my apprenticeship with these two crazy Swiss German chefs, working 70 hrs a week, good old wage of $12 a week near the Lake District.

Joined a large hotel group working in a 5 star kitchen brigades of 100 chefs through England Midland, Manchester, Royal Berkshire, Ascot. Ended up at Governor House, 90 Park Lane London with Chef Nico. Leaving to run a French restaurant, Lopera and a famous club called The Zanzibar, both in Covent Garden as head chef.

Arrived in Australia in the 90’s establishing myself and becoming the Executive Chef of the Sydney Olympics 2000, Sydney Showground, Sydney Football and Cricket Stadium and Compass Australia. During my time with Sydney Showground I was invited and trained to become a food judge tasting the best food and wine products of Australia. Later opening up a cafe called Best of the Land promoting gold medal products and giving people insights on where to buy.
